It’s been a busy week so far. Husbands two brothers have been home since last Friday and I have been packing them up to go on fishing trips with the other days wrapped around impromptu family gatherings and today is the last family gathering I have to attend! Don’t get me wrong, family is great but I love my quiet. I love knowing how my days are going to go from start to finish without a hitch. I guess it’s the hermit in me but I just don’t like spending time away from home that often. So, anyhow last night while husband was away fishing I made a quick supper specially for me that tasted perfect with the humidity we have been having again. It was a cold, crisp salad with all the fixin’s!
Fresh arugula, lettuce, spinach, dill, & radish out of the garden and a fresh hard boiled egg from the chikkers. The only thing added was the dressing. But, it was made in Stewartville MN about 180 miles from here- although I am sure none of the ingredients are local!
The farmers markets around here are starting up next week, so I may be able to find something I don’t have in my garden for a cool twist on One Local Summer.

This kind of salad, with a hard-boiled egg, is one of my favorite individual dinners–I often make if when my boyfriend is eating somewhere else. It’s good all year, but in the summer it’s heavenly to go out in the garden and browse for ingredients.
Yes, heavenly is the word! It just tastes so much better when you can go out and get what you need. No stores, no lines, just nature and you.
