
I have worked the last two years for our local Post Office, every Saturday with little time other than filling in for vacations and last week was my final week of work. I loved the job, but it didn’t pay well, no benefits, and no hours (I was only guaranteed 2) plus it got in the way of my business and I have finally called it quits.
So, why am I telling you this? Because I can finally go to the farmers markets on Saturdays! Now that I have the time to hit the farmers market I came up with wonderful buns homemade by a neighbor and organic chicken from Morning Has Broken Farm in Granite Falls MN. Since we don’t eat our happy hens- I have been threatening the ducks though- I have to go elsewhere.
It’s still overly hot here so we fired up the pit and grilled chicken. We ended up with grilled chicken sandwiches on homemade buns with fresh arugula pesto spread and fresh arugula for some crunch. It was divine!
The buns were homemade, hand ground grain, but not local- she buys in bulk from a food coop. Made less than a 1/4 mile away.
Chicken was raised nine miles away.
Arugula and garlic (in the pesto) from the garden. The bad guys- EVOO, Pecorino Romano, and pine nuts were not from around here. As usual…
That about sums it up for this weeks OLS- hate to say it, but my picture looks so good I may have to sneak back to the kitchen for a little midnight snack!
