Soup Dejour

Sometimes I get in the mood for soup and it doesn’t matter if it’s hot or not. Luckily for us we have had some rain (1 1/2 inches) and a few dreary days to boot, which in my opinion is a wonderful time for soup. So I made a mess, threw together what I had in the kitchen/garden and it turned out to be a southern style tomato soup. Yum!
Southern Tomato Soup
- I used chicken stock from last chicken we had here
- Tomatoes (garden) I did not skin the toms as I like the look, texture and taste better
- Fresh dried black beans from the garden (My first time growing them and definitely not my last- so, so good!!)
- Onion from the garden
- Corn from the garden
- Red pepper from the garden
- Fresh basil from the garden
- And lastly the only 2 things I cheated on was the organic rice which I buy in bulk from my food coop and the pecorino romano cheese for a topper.
Now this looks gooood! It’s wet cold weather for us today too so it’ll be a nice cabbage soup for dinner
I had soup this week too–and you’re right, sometimes you need soup regardless of the weather.
i love soup and that looks delicious. we might try to grow black beans next year. what was it like taking all the hulls off? we are letting some edamame go to seed and i guess it can be dangerous shucking them cause the hull are like razorblades? it will be worth it for the few necessary for seed but a winters store is another thing altogether.

I don’t know if this works for edamame but I was told to put the dried pods on a sheet and dance on them (please don’t envision this!) and it seemed to work well. Then it was just a matter of separating beans from shell.
